Demonstration: students observe as instructor prepares recipes.

#10 Cupcake and Muffin Baking Party
hands-on (ages 7-11); 1 adult per 2 children


*Parents are welcome to meet the instructor before this class, but will be expected to leave the room before class begins since girls in this age group usually express themselves more freely without adults present.


Are you looking for an activity that you and the kids can enjoy together? Here is a class where you learn how to create cupcakes and muffins that taste as good as any from your local bakery, but because they are made with whole foods, natural sweeteners, and unbleached organic flours, they are 100% better. You and your child will mix and bake a variety of cupcake and muffin batters and prepare an assortment of frostings to decorate the delicious results. Make them here under Elliott's guidance; then make them at home together again and again. Vanilla Cupcakes; Chocolate Cupcakes; Strawberry Cupcakes; Blueberry-Corn Muffins; Carrot Cake Muffins; Banana Muffins; Frosting Flavors: Vanilla, Coconut, Chocolate, Cream Cheese, and Peanut Butter. (Some organic dairy will be used.)

# 11 Top That! A Pizza Party and Basic Skills Class for Teens
hands on (ages 12-15; adults may observe)


If you like pizza, you will really love making your own. You'll prepare the dough, watch it rise, roll it out, and simmer the tasty tomato sauce as Elliott shows you tricks that professional chefs use. And the best part is mixing and matching the toppings! Get as creative as you like, then pop your masterpiece into the oven and get ready to enjoy the great results. Using traditional tools (called a pizza peel and pizza stone) you will make: Organic Whole Wheat Pizza Dough; Organic Unbleached Regular Pizza Dough; Tomato Sauce; and Your Choice of Toppings: Mozzarella and Parmesan Cheeses, Tofu, Garlic, Olives, Onions, Peppers, Mushrooms, Fresh Herbs, Sun-Dried Tomatoes, and Zucchini; followed by Lemon and Raspberry Sorbet. (Some optional dairy will be used.)

# 13 Basic Knife Skills for Teens
hands-on (ages 12-15; adults may observe)


For teens who are interested in cooking, it all begins with learning how to properly use a knife to effectively and efficiently cut fruits, vegetables and herbs. Not only are knife skills fun, but they're essential for quick and easy food preparation. Elliott will show you how to slice, dice, and mince a variety of fruits, vegetables, and fresh herbs the way professionals do. He will also discuss knife safety and show you how to keep your knives sharp. Then, with all the ingredients you cut in class, you will see how easy it is to prepare a healthy, delicious meal. We will enjoy Black Bean Burgers on Whole Wheat Buns; Whole Grain Salad with Confetti Vegetables and Mustard Vinaigrette; and Mixed Berry Crisp with Vanilla Whipped Cream. (Some optional organic dairy will be used.)

# 14 Kitchen Survival: A Do-It-Yourself for Teens and Young Adults (NEW RECIPES)
hands-on (ages 16+)


On the home front or away at college, this is a class for older teens and young adults who aspire to be more self- sufficient in the kitchen. Whether cooking is your passion or a necessity, this class will provide you with an introduction to basic cooking techniques. You will be given tips on how to make smarter, healthier menu choices; how to read and decipher food packaging for nutritional information; and guidelines for purchasing the best-quality produce. You'll also learn how to cook healthier versions of the foods you like. All recipes are designed to be prepared either in a well-equipped or bare-bones one- burner kitchen using a stovetop, electric burner, grill pan or electric grill. Broccoli and Cheddar Omelets; Grilled Turkey (Optional Veggie) Burgers with Spicy Peanut Sauce and Rainbow Slaw; Red Lentil Coconut Curry Soup with Rice and Spinach; Black Bean, Grilled Corn and Zucchini Tacos with Guacamole; Linguine Marinara with Sautéed Shrimp or Tofu andThree-Berry Parfait with Maple Vanilla Whipped Cream. (Optional organic turkey will be used in one recipe and organic dairy will be used in the dessert.)
